I’ve seen this recipe idea floating around the internet—protein ice cream sammies—and I just had to make my own version. Did you know that Halo Top doesn’t just make low-calorie ice cream… they also make cookie mixes? 🙌
Instead of making mine as bars and slicing after freezing, I went for classic cookie sandwiches or as I like to call them, cookiewiches if that’s even a word 🙃 I used the Halo Top Peanut Butter Chocolate Chip Cookie Mix, one of my personal favorites because it’s lighter (only 80 calories per serving) and the peanut butter flavor gives such a delicious depth. It’s made with a fluffy whipped topping, Levels vanilla protein powder (25 g protein in 1 scoop + no added sugar 👌), and a touch of Truvia brown sugar for extra sweetness without the carbs.

For the cookies (makes 12):
- 1 bag Halo Top Peanut Butter Chocolate Chip Light Cookie Mix
- 3 tbsp butter (melted)
- 3 tbsp water
For the protein “ice cream” filling:
- 1 tub light whipped topping (partially thawed)
- 2-4 scoops vanilla protein powder of choice (Levels is my fave – if your scooper is larger, use only 2)
- ¼ cup Truvia brown sugar substitute

- Bake the cookies: Prepare cookies according to package directions. You should get about 12 cookies total. Let them cool completely before assembling.
- Make the protein whip: In a medium bowl, mix together the whipped topping, protein powder, and Truvia brown sugar. You can use an electric mixer for speed, but it also comes together easily by hand.
- Assemble sandwiches: Scoop the protein whip onto half of the cookies. Place the remaining cookies on top to form sandwiches.
- Freeze: Place in the freezer for at least 30 minutes (or longer for a firmer texture).
